For the base I started with Cheesecake Graham Crust backed up with a little AP.
I prefer this as a 'pie'/cheesecake base as it gets the type of biscuity base I'm after without being too harsh. The cheesecake element also helps to bind in the other creams.
For the lime I chose FW Key lime - was there really any better option? :)
For the remainder of the main filling I used primarily FA Custard, as I didn't want the heavier effects of Cap VC or TFA VC to dominate, however a touch of Devon cream helps to give a touch more rich body to it.
Finally the whipped cream topping - whipped cream on it's own isn't a big enough player, but too much would have risked odd notes coming into play, so a little sweet cream rounds it out to make the lighter creaminess be present and come closer to an actual whipped cream topping.
