I'm completely a less is more kind of person but strawberry at 10% is not all about the strawberry. The strawberry ripe at 10% with steep becomes a caramelized strawberry kind of taste like the sugar cooked and caramelized then poured over strawberries. A lower % of Ripe would work in here but you will not get the caramelized effect of 10% I used a small amount of sweet raspberry to enhance the actual fruit.

Warning : This juice needs 3 week steep minimum. For my taste buds it is SHIT before steep. It is fantastic with steep!
I know it sounds crazy high on the Ripe but try it
