6 days steep and it's looking good. The spices are subtle, the Apple is warm and sweet, but not too sweet. It's very close to a warm, spiced Apple Cider with a hint of orange and bourbon. The cinnamon, nutmeg, allspice and clove are doing what I'd hoped, and not overpowering at all. Might add a few drops of Bourbon RFSC on the next run. I'll know for sure after 30 days, but there aren't any off-notes to steep out. I'm keeping my eye on you, Cinnamon Roll, you better behave during this steep!
Almost 14 Days:) Much more coherent, it got a little weird around 8 or 9 days. The Panettone was funky. But now, it's really, really nice. Im thinking about adding an extra drop or two of Holiday Spice and Chai, I went really light on those due to their high potency, but now I want a little more spice. Probably no more than 1 drop each, waiting for 30 days to tell for sure. Just to further experiment with the 30 day theory. It's fine as-is, but a little tweaking could be fun.
