The combination of Inawera Biscuit and Capella Sugar Cookie gives a really nice biscuity profile, it almost gets the authentic Scottish shortbread vibe but falls short slightly but the 2 combined create a great base especially when the AP is added which gives an almost crumbly feel.
Good Scottish Shortbread contains rice flour and this flavour profile is beautifully provided by FE Sweet Rice. I wouldn't go over 2% though as it starts to take over.
Another key ingredient is butter, lovely creamy, artery clogging butter, I which is unbelievably provided by FA Butter! Believe the hype, this is on the nose with none of the artery clogging properties!
The added sweetness is provided by Flavorahs Frosting which adds a vanilla note, not an in your face vanilla,but a subtle vanilla that sits there complimenting the mix.
The saline not only helps keep this moist but also pops the recipe. Try it without then with and you'll get it!
Now the hard part!
