After ample steeping, this is actually pretty good in spite of the high percentages, definitely a better cheesecake base than NY cheesecake for me. I could see it replacing cream with fruits well for my taste.

Can you please share an approx number of days that is ample steeping in this case? 2-3 weeks?

I moved home and left it in a box for about 6 month. I would think that a couple weeks would be enough but I can't say for sure.
