This is my attempt at replicating the Pyure brand of stevia sweetener that has the added ingredients of Apple Cider Vineger and Citric Acid.
I think that percentages are fine? But will know better when added to juice?
100% pure stevia extract ( Rebaudioside A 97%) used.
Purchased from ebay.
No problem,
Likewise, please keep me updated.
I am sure that if a few of us play around with the percentages then we will get a sweetener that ticks all the boxes?
I have maybe been conservative with my percentages, or maybe not?
Will do,
having never handled stevia before I think I'll try the same process as menthol & citric acid crystals so:
1 st put crystals within folded pouch of greaseproof paper.
put that in ziplock bag, grind to fine powder with rolling pin.
chuck it in warm PG in magnetic stirrer (i shine a bright light on it) see it all dissolved;
Let it cool before adding Citric & vinegar.
It might be that it doesn't dissolve well in PG, if doesn't,
I'll do the same as above, but in a minimal amount of distilled water,
then dissolve that solution in PG.
As for percentages, I was surprised that you can dissolve 2 parts menthol crystal (powdered, as above) into 1 part PG (warm)
I then dissolve that further just so it doesn't recrystallize in the bottle.
The Stevia powder I used was very fine. Think talcum powder fine?
The citric acid I did have to grind as it was a bit coarser.
I heated the PG and used a milk frother and everything dissolved with no problems. Just checked my bottle and it is still clear with no recrystallising of the powders, so I think you will be fine?
Ok hopefully this is it?
Still open to further suggestions though if anyone has anything further to add?
I dropped the stevia powder slightly to 4% and upped the ACV to 1.5% and the CA to 0.8%.
This is good to me and still very sweet. What I did notice with this new mix was that after a weeks steep the initial aftertaste was almost gone and when added to a mix I didn't notice at all?
1 drop per 10ml added a lovely sweetness and helped the fruits slightly without appearing candy like. When added at 4 drops per 10ml it was very, very sweet and the fruits start to take on a candy like taste.
@MrBrown no this is a sweetener. Pure is a brand of stevia liquid, that is expensive, and is very hard to get hold of in the UK. Hence why I looked to clone it. Great for fruits!
Chewy - thanks for deveoping this recipe/solution.
Are you still using this formula as a sweetener? Can you update us on your findings, where it works best, whether it clogs coils, whether there is an aftertaste and how it behaves with already-sweet flavourings?
I found some of your discussions with others on the forum and am impressed by your tenacity. A big thanks for all your efforts and for sharing them here.
