I think the Regular OOO Cheese is more Swiss then the Parmesan is but I didn't find it till after I'd pulled the trigger on the order.
check out Cream Cheese (SC) Real Flavors. Mix at 0.3-0.7% somewhere between an aged cheese and a savory cream cheese. Could work in exchange to your Parmesan.
