This almost reminds me of a strawberry jelly donut it has the cream filled from the vic and vienna cream done just right then there's the distinctive doughness of zeppola that pairs really nice w/ cookie to make it more realistic I totally get a donut vibe off of this good bad or indifferent it's a sweet bready doughy then some strawberry with some creaminess !

As far as the fruit goes in this recipe it is meant to be a back note and not the main flavor you get initially but this is the lovely thing about DIY if you know you'd like more fruit by all means increase the %s up some to suite your desire. I personally like very small touch of SB when combined with heavier breads its just me. Typically I usually want as much SB as I can handle but not when placed with a bready note... weird of me I am sure but that's that lol. Also something to consider MF are stronger SB is used at it's higher suggested ratio...I wouldn't push it much further - MF Vanilla you could go higher if you wanted but it is aimed at being an sweetener to the Zeppola and Vienna Cream it never was intended to stand out. This is meant to be a doughy bready treat with a slight jammy SB inner and a touch of cream on top. I hope you find what works best for you !
