The apricot comes out on top of the creamy base and this combination has just worked for some reason. Apricot seems to pair nicely with the lemon notes in the cheesecake.
This recipe was near complete with just apricot, cheesecake and flapper pie. I could quite easily have just use these 3 and be done.
But I wanted a little more biscuit and added some more cream for good measure.
