My challenge here was making the mousse for this recipe. As I was reading recipes for IRL(in real life) versions, mousse is generally made from a heavy cream and gelatin, especially when it comes to fruity mousse recipes. So I decided to work with FA Candy/Jammy Wizard for the gelatin aspect, Which so far seems to be working great. I am also thinking of a 2nd version with Purlium Jelly Candy. So many awesome choices out on the market now to choose from for flavors.
The mango in the mousse is to be made with Mango Pulp, so that was a perfect reason to try SSA Mango Pulp, I do think this worked pretty authentic, because you are getting the mango flesh only with not much juice, I would not take that flavor too high in %, because it could get some funky off notes. In this recipe, it works well with FLV Sweet Mango, and the SSA Raspberry Syrup to top it off. I am really enjoying this mix so far.
