Grand Christmas Pudding🎄

I began working on this in July and have gone through a few versions. The VT Christmas Pudding has the bread in there and worked well with Pudding Base & Bread (Sweet) bread notes. Welsh Custard is unique with dark rich vanilla plus heavy dense eggy custard. It pairs well with Custard Premium. If you don't have Welsh Custard, you could always make your own combination to achieve that effect. Gingerbread & Golden Syrup bring some sticky spicy sweetness. Back to the VT Christmas Pudding. This is nothing like an American fruitcake. The boxed ones you find at stores seem dry with dried out plastic-y "fruits." This one does have some fruit notes in it. Waaaay in the background I do get an orange peel note which is a common addition to puddings like this. I added my own extra accent of Raisin, just to come through a bit more. It also brings very present brandy notes to the recipe after maybe 10 -12 days. The sauce is a brandy butter sauce with Butter Cream & Burnt Sugar. Quite delicious.

So delicious that it's almost scary. This mixture of flavors is brand new to me. The bulk of the work here is done by the Christmas Pudding, the Welsh Custard and the Raisin. There are no biting stinging sharp spices. I did add a small bit of Gingerbread because the food recipe calls for some ginger. The VSO Raisin gloriously tastes like the raisins have been soaking in brandy, smooth & sweet. The Christmas Pudding is warm, sweet, sticky & moist (thank-you Golden Syrup!). The brandy note is eventually warm & smooth. The Welsh Custard was custom made to stand up to all these breads with its darkness & heavy consistency.

After a couple weeks this is incredibly balanced, saturated and with a clearly detectable variety of rich decadent flavor notes.
As always, sweeten to taste.

Butter Cream, Burnt Sugar, Custard Premium, Welsh Custard
