Yet another pairing from the Page-Dornenburg Flavor Bible: Mangoes and Orange
The most used layer for a "tart" is OOO Pie crust and WF croissant, I wanted it a bit darker, so I swapped the croissant with FLV Starch base.
Considering that the "tart" in the Portuguese E.T. is very faint, Starch base is a must, it's a trick I usually do on my cookies, but it improves any bakery.
The filling layer is made by pushing the Portuguese ET up to 4% and with a touch of WF Mascarpone Cream, it's nuff said for a great filling.
Fruits, I went straight forward with two strong flavors, I wanted the Mango to be there but not overpowering in goes FA Indian a straight Mango to the point. (FLV or other mangoes could overpower the mix)
To balance the sweetness with some acidity, Blood Orange by FLV seemed perfect to me, Shisha Orange might have been another one for its strong zesty notes, but could have been a hell of a job get the right percentage to avoid overpowering everything, I stuck to the orange I love.
