I really been in the mood for some Lemon Cream Wafer so that is the anchor here, adding additional Bright Lemon and more Cream with the Lemon Custard and FE. Building out the cookie with that classic Cap Sugar Cookie. And I really just been looking for an excuse to use the Creme Anglaise in a mix.
Now, for the Nomz Shortbread. I really seriously love this flavor. Its super buttery and delicious. And one thing that I always enjoy with Lemon is Butter. So I wanted try the Shortbread in a Lemon Cookie mix. The problem is it just stomps all over the brightness of the presence of any Lemon. Especially probably while paired with the Lemon Cream Wafer which often times its Wafer note dominates in mixes. My reasoning for zeroing on the Shortbread is because this happened when using it in a Peach recipe of mine. It just completely bullied and overpowered all the bright fruity top notes. Which came back in spades after removing it from that mix. Probably gonna try either just remove ot all together or try a softer Shortbread like SSA
Update 10/20: this is MUCH more rounded after a full 2 weeks steep. Plenty of people would probably enjoy the level of Lemon present in the mix once everything has time to settle down. I guess I'm just a fiend for stronger lemon in my bakeries. A delicious buttery cookie with some lemon baked in with that distinct lingering of cream Wafer
