I’m using custard cake and creme anglaise as my cake base. Morello cherry is my main, meaty red cherry, and to that, I’ve added SSA marzipan for a cherry and almond accent. Since the real dessert can be a mix of berries, I’ve topped this with raspberry jam and a touch of lemon zest.
