Bit of a gamble with the strawberry sparkling and maybe a bit high on the white chocolate. Will have to sit and wait I suppose.
Week 4
This turned out not to bad and closer to profile perfection than I expected. The main body of the pavlova is spot on, dense gooey fluffy marshmallow. There could be some improvement to acheive a more prominant meringue crust.
The white chocolate worked well here and is aiding the density of the mallow.
I would be keen to play around with this mix without restrictive rules.
While kiwifruit and strawberry are traditional New Zealand toppings for a pavlova I fancy the idea of a fruit salad version.
The strawberry sparkling and strawberry mint is an experiment and while adding a interesting twist I would probably omit these from future renditions.
