Mary Jane is to a peanut butter Taffy as Bit o' Honey is to an almond meal Taffy. The best flavors I have to create a base for these types of chewy candies is Nougat and the nougats contribute the honey without having to add a straight out honey flavor.

Nougat: Chewy and soft, though it can vary from light and airy to hard and brittle depending on the recipe.

Nougatine: Hard, crunchy, and brittle.

In essence, nougat is a more complex confection with a range of textures, while nougatine is a simpler, harder treat primarily focused on the combination of caramelized sugar and nuts.
