Nooobody can mix this unless you provide notes about, 1st -the Honeydew, 2nd - the sweetener.

Looks tasty. I’d nudge honeydew down to 1–1.5% so it doesn’t drown the cheesecake and either bump NY Cheesecake to \~5% or add 0.5% Vanilla Swirl for body. Give it a 5–7 day steep and it should come together nicely.
