The Base: Juicy Cherries (SSA) and Ripe Cherry (SSA) provide the deep body of this flavor profile while Cherries (INW) adds a little bit of candy-like cherry and Maraschino Cherry (TPA) adds a little bit of maraschino cherry essence that's great at very low doses. These four cherry flavors are very strong and they will be the dominant flavor.
The Pop: Cranberry (CAP) and Cranberry (TPA) add the bright, tart "Red" flavor you expect from a cherry. I like using them together because one tastes like fresh cranberry juice while the other tastes a little cooked like a relish or preserves.
The Bridge: Strawberry, Ripe (TPA) is the secret weapon. It rounds off the chemical edges of the cherry and adds realistic sweetness.
The Emulsifier: At low percentages, Pear w/ Stevia (CAP) acts as a flavor blender/flavor carrier, melding the fruits together so they don't taste like separate layers. Pear w/ Stevia at low percentages tastes sweet and fruity and juicy without a pear skin flavor.
Additives: Sour (TPA) lowers the pH a little bit and helps enhance the flavor while Cotton Candy (10% EM/Ethyl Maltol) (TPA) adds mouth feel and adds to the "red" cherry flavor.
Use this mixture as the only fruit profile in any recipe at 8% total (including the sour and Ethyl Maltol).
Use a higher PG level than normal to taste more of the nuances and tartness of the flavor.
