The Gooseberry Fool can be traced back to Elizabethan times, a mix of fresh gooseberries, cream or custard, and sugar it's a classic English summer dish.
Obviously you have to start with a gooseberry in here - there isn't a massive range available but Sasami Gooseberry is a realistic and well developed flavour.
For the sugar, some TPA meringue gives it that sugary taste, without using a sweetener that might mess up the balance of sharp vs creaminess I wanted here.
The cream side was the trickier part. Recipes for this dish in the food world vary from custard, to double cream, to whipped cream. For a vape I wanted to aim for somewhere in the middle.
FA custard is the base of this - not too heavy and those ever so slight lemony notes help keep the gooseberry fresh and strong enough against the creams without adding any clear flavour to muddy it.
The Bavarian Cream and Whipped Cream work together to enrich this without risking things going heavy - lightening up the custard and adding some nice top notes.
Finally just that little bit of TPA Sweet Cream to bring the custard and other creams together.
Steep time - some like it shake and vape but I think better after 2-3 weeks.
